It is going to be a diet month for me this coming Fall as I try to get back to a healthy weight. My last physical did not generate the results I wanted. And I knew the culprit was caving in in to the food cravings during the business travel I had been doing the past few months.
And so I have been diligently eating salads and protein dishes and successfully avoiding the carbs. I tried this for a whole week and I could already see a couple of pounds shed.
But like any other diet there there is always a ‘cheat’ day. I need this so I will not go totally insane.
And thus, on said ‘cheat day’ I decided to combine all my leftover salad ingredients (a.k.a. LSI) into a healthy and hearty pasta sauce!
Here’s sharing that simple recipe which I was able to whip up in less than 15 minutes!
– All my leftover salad ingredients, comprised of heirloom tomatoes, button mushrooms, arugula, and mixed spring greens
– Olive Oil
– Diced Garlic
– 1 Cup of Whole Wheat Pasta
STEP ONE: Dice the tomatoes. The heirloom tomatoes I had been using in my salad were beginning to overripe. But this is actually perfect because the tomato juice would easily come.
STEP TWO: Saute the diced garlic in approximately 1/4 to 1/2 cup of Olive Oil. The garlic should be golden/light brown in color.
STEP THREE: Add the heirloom tomatoes and let it sit for a few minutes under medium heat.
STEP FOUR: Add the button mushrooms.
STEP FIVE: Add the Parsley until the leaves have softened.
STEP SIX: Add the remaining salad ingredients. In my case I had a bag full of mixed Spring Greens.
STEP SEVEN: Voila! Your pasta sauce is done! If you have olives, capers, and other garnishes, you can add them. Do not add any spaghetti sauce or canned tomato sauce. The diced tomatoes and olive oil would bring out all the natural and delicious flavor of this sauce.
Serve with not more than a cup of whole wheat spaghetti noodles. Place the sauce on top of the noodles and layer on thick. Enjoy!
